OT 89 Honey processed:
This coffee is picked form selected blocks from the beginning up to the end of the harvest. It includes Coffee from the first crop as well as from the very late crop.
It is a perfect overview from the farm over the year, because it shows the Highlights prepared in a special way.
Our honey processed coffee is pulped by the machine only to separate the cherry from the coffee bean. But the mucilage is still on the bean.
After pulping the coffee is spread very!! thin on the drying beds. We need about 5 times more space for the same quantity as normal processed coffee.
Than it has to be turned every day very carefully because there is a high risk of further unexpected fermentation. The time to dry this coffee is more than double of the normal processed coffee.
But than you are honoured with a special sweetness because the sugar from the pulp is influcencing the taste more than 3 month after picking, while the coffee beans are drying in the sun.
We cured the coffee ourselve because it is a problem for the mill to handle this very special coffee.
