Brazil is the largest U.S. producer of green coffee and therefore influenced the coffee prices on the world market. The annual production varies between 38-50 million bags of 60 kg. This, now about 14 million are required bag for their own needs but largely covered by Robusta coffee.
The coffee production in Brazil is mainly in the hands of small farmers and or cooperatives, which partly export themselves or cooperate with export companies. Quality Brasil can be simplicity, coffees classified as follows:
ARABICA - approximately 80% of total production 1.1. washed Arabica
"washed Santos"
1.2 unwashed Arabica. a) Unwashed Arabica, "Santos" b) Unwashed Arabica, "Rio Minas"
ROBUSTA - approximately 20% of total production 2.1. unwashed Robusta
"Conilons"
The important coffee export qualities are the unwashed "Santos" and Rio Minas"coffee. These two qualities differ above all in the taste. While Santos coffee generally have a soft and sometimes spicy flavor of coffee, Minas coffee for our tastes have partially biting taste, hard, metallic-chemical Rio.
Unwashed Santos coffee are used mainly in Northern, Central and Western Europe and in the United States in almost all classic mild coffee blends. Even for the most part, ordinary Italian espresso blends consist of unwashed Santos.
Fresh, coffee unwashed Santos are characterized in particular by the following characteristics: - light bread notes smell - greenish yellow color bright.
We of InterAmerican Coffee prefer and recommend making the following flavor and taste characteristics are highlighted for the Santos a bright, "Reddish-brown" roast color: - Very slight coffee flavor - Slightly fruity to spicy aftertaste - Soft, long-lasting peanut flavor on the finish.
